North/South Korea







So this being election week in the US, I thought about voting, democracy, etc and chose to prepare food from North/South Korea. There you have the dictatorship (with no almost no human rights) and the democracy (thriving). The contrast makes you appreciate even more what freedom we have here and in the US.

I don't think there are any Jews in North Korea, but like some other countries, they hate Israel anyway for no reason.

South Korea, on the other hand has had a Jewish community since the Korean War. The community is made up of military personnel and business people. Chaim Potak was stationed in Korea.
It was very interesting to learn that the South Koreans study Talmud. They have come to the conclusion that Talmud study has helped the Jews to succeed. so the Talmud is translated and studies in South Korea.

Seaweed Soup

We are a soup loving family. When I read the recipes, I just felt that they would need more than seaweed to satisfy my family. I tried to find Korean-type vegetables and learned that until recently vegetables were not too available in Korea. So from the other recipes I read, I decided to redesign this soup.
I don't think you can call this soup Korean. Except for the seaweed, I added the corn, zucchini, and scallions.
The soup was just ok. Seaweed is salty and this soup was salty.

My Seaweed Soup

Ingredients

Water
1 1/2 cups dried seaweed
2 - 3 chicken breasts
6 cloves garlic, chopped
4 tbsp sesame oil
6 tbsp soy sauce
4 ears corn in pieces
2 Zucchini in coin shape

Prepare

In a large  pot, cook chicken, garlic, soy sauce, corn, zucchini and sesame oil until chicken is cooked.
Remove the corn and add some more water.
About 1 hour before Shabbat:

Soak seaweed in cold water about 30 minutes until soft and rehydrated.\
Rinse seaweed and drain.
Add seaweed and bring to boil.
Leave on warmer until ready to serve.

Fried Zucchini

My Fried Zucchini

Ingredients

6 zucchini, sliced into coin shapes
2 cups flour
6 eggs
Salt and pepper
Vegetable oil for frying

Prepare

Salt zucchini.
Beat egg and salt and pepper.
Coat zucchini in flour, then egg.
Fry about 3 - 4 minutes until light brown.

Chicken with Bulgogi

From what I read, bulgogi is a standard sauce used on just about everything. It seems to be basically soy sauce, mirin, honey, garlic, and ginger.

My Chicken with Bulgogi

Ingredients

Chicken breast cut into serving size pieces
1/2 cup soy sauce
1/4 cup sugar
sake, mirin, or some white wine with sugar
1 tbsp honey
1 tbsp ginger
3 cloves garlic
cup of scallions, chopped

Prepare

Mix all ingredients together, except scallions and chicken.
Cover chicken with sauce and let sit in refrigerator about 1/2 hour.
Pan fry with scallions.

My Korean Egg Rolls

Ingredients

12 eggs
2 onions, chopped
4 carrots, chopped or grated
4 sheets seaweed paper
salt and pepper
Oil for frying

Prepare

Whisk 3 eggs, add about 1/4 of the onions and carrots, salt and pepper to taste
Fry egg at low heat
Place seaweed on egg and let good a minute or 2
Roll egg tightly
Let cool

My Scallion Pancakes

Right before serving, on the warmer, I heated some soy sauce with honey and mirin. I poured just a little of this over the pancakes.

Ingredients

4 cups flour
4 eggs
3 cups water
2 bunches of scallions, chopped
salt and pepper
Oil for frying

Prepare

Make batter from the eggs, flour, water, scallions, salt, and pepper
Let sit 10 minutes
Fry a thin layer of the batter until lightly brown
Repeat

My Chicken Thighs

Ingredients

16 chicken pieces, I used legs and thighs
1 cup soy sauce
1/2 cup  sesame oil
about 4 tbsp (1/4 cup)  grated ginger
1/2 cup  honey
10 cloves garlic, minced or grated
12 green onions, chopped

Prepare

Mix soy sauce, sesame oil. ginger, honey, and garlic.
Coat chicken with above.
Bake chicken about 45 minutes at 375.
Turn chicken cover with green and bake 15 more minutes.

Portugal and the Azores Islands



General Information


Why Portugal and the Azores Islands? I am not sure. I grew up in Providence, RI, which had a large Portuguese population.

When my sister Stefanie was born, my parents hired a live-in maid. Her name was Irene and she was from the Azores Island. She was very homesick but hoped that she would be able to earn money and then get the papers she needed to stay in the US and bring her family. It didn't work out that way and after that my parents hired several Portuguese women, both from the mainland and from the Azores Islands.
So I guess, when I started searching the internet for a country idea, Portugal came up and that led me to the Azores.

Although Jews have a long history in Portugal, only about 600 remain today. In addition, the Jewish Virtual Library, lists another 100 Morranos.
The two groups are listed separately because the Moranos are actually a separate group.

There are theories that almost all those from the Azores are of Jewish descent. I remember my father would joke about how many Portuguese workers at his factory had Jewish last names. He would tell them and they would be so surprised. Today there are no Jews in the Azores.

Kale Soup

My Kale Soup

Ingredients


6 potato, quatered
Meat bones
4 cloves garlic, chopped or grated fine
4 carrots, chopped
2 onion, chopped
Kale, not available try spinach or brocolli or combination
Chorizo sausage
1/4 cup chopped parsley
1 cup kidney beans, soaked before overnight
1 tomato, chopped
pepper to taste

Prepare

Boil potatoes in lightly salted water.
Remove when done and mash.
In olive oil, saute onion, garlic, and carrots
In soup pot, add beef bones and  all other ingredients, except potatotes
Cook until done and then add potatoes and cook 5 more minutes

My Chicken: Frango na pucara

Ingredients

2 whole chickens cut into 8 pieces each
1 -2  tbsp sweet paprika
salt and pepper
1 cup flour
1 cup chiken broth
4 tomatoes, chopped
small amount of some type of smoked cold cuts, such as pastrami (this is to give the ham flavor), cut into small pieces
2 red peppers, sliced
2 onions, sliced
2 tomatoes
3 bay leaves
1 cup white wine
2 tbsp dijon  mustard
2 tbsp tomato paste


Prepare


Mix floursalt, pepper, and paprika together.
Dredge chicken pieces in this.
In a skillet, saute each piece of chicken and oil and cook about 3 to 5 minutes, until brown.
Remove and saute onions, tomatoes and peppers.
Place chicken in pot.
Add broth.
Cover with more paprika, tomato, peppers, onions, and bay leaves.
Add wine.
Bring a boil and then remove from heat.
Add pastrami, mustard, and tomato paste.

Azores: Caldo do Piexe Fish

I served this as a first course at lunch. When I took it off the warmer it was more liquidy than I expected. It was still very tastey. I think I should have served some rice or pasta with it to absorb some of the liquid.

Ingredients

White fish, such as talapia, cod or sole
6 white potatoes, chopped
3 sweet potatotes, chopped
2 tomatoes, chopped
garlic, small pieces, grated
2 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
Parsley



Prepare



Boil sweet and white potatoes in salted water until almost done.
Cut fish into thick pieces.
Saute onion, pepper and garlic in oil
Add tomatoes and salt.
Add fish and water.
Let simmer and cook.
When cooked, add parsley.



Galinha ao Vinho (Azores Chicken)

My Galinha ao Vinho (Azores Chicken)


Ingredients

Chicken pieces.
1/2 pound of mushrooms, sliced.
Shallots.
Tomato, diced.
1/2 pint dry white win.e
Margerine, with taste of butter.
Garlic.
Parsley.

Prepare

Season chicken with salt and pepper.
Saute in margerine about 10 minutes.
Add mushrooms and shallots and cook until mushrooms are golden.
Add tomatoes and garlic and cook until done.
Remove chicken and add wine to sauce.
Let simmer and season.
Store this way until Shabbat.
On Shabbat, warm ingredients.
Pour over chicken and add fresh parsely.

Ingredients

Potatoes

1 cup soy milk
4 hard boiled eggs
margerine (taste of butter)
parley

Prepare


Cook potatoes in salted water.
When done reomove and drai.n
Mash egg yolks with small amount of soy milk.
Add potatoes, remaining soy milk, margerine and onions.
In baking pan, bake about 1/2 hour at 350.
When done add chopped egg whites.

Madagascar




By chance, for 3 weeks,  we have eaten food from countries beginning with the letter M: Moldavia, Malta, and Malaysia. So continuing with that theme, this week, I chose Madagascar.
I really didn't know anything about Madagascar except that there was a movie by that name (and I have not even seen the movie).  Madagascar is an island off the coast of Africa. Much of the wildlife, both plants and animals, can only be found there.

Jewish Life

As far as I could find, there are no Jews today in Madagascar. However, had the Germans (and other too) had there way, it would be the home of the Jews. Apparently when the Germans conquered Poland they needed an additional plan to get rid of the Jews. They came up with the Madagascar plan to ship all the Jews to Madagascar. (They were no the first to think of this). They were not able to do this because the British controlled the waters.

This soup is great. I could not find any veal bones so I used meat bones. I panicked, thought it would not be tastey enough, and threw in the chicken neck and bones that I had left after cutting up the chicken for other recipes.

My Lasopy Vegetable Soup

Ingredients

Meat bones
1 chicken neck with some meat (I had this left when I cut up chicken for the other recipes. I decided to add this for extra flavor.)
Water
salt
6 carrots, peeled and cut into large pieces
2 turnips, peeled and cut into large pieces
8 scallions
1 cup string beans
3 tomatoes, cut in quaters
black pepper

Preparation

Cook bones in water with salt about 1 hour.
Add vegetables and cook until tender.
Remove bones.
Puree vegetables.
Add everything back into the pot and cook 5 more minutes.
Season with salt and pepper.

My Madgascar Chicken

Easy to make and very good. 

Ingredients

5- 6 boneless chicken  breast, cut into pieces
1 can coconut milk
2 small onion, diced
2 red pepper, diced
2 tomato, diced
2 cloves garlic
1 inch ginger
Cayenne pepper
Salt
Lemon juice
Oil

Preparation

Marinate chicken pieces in lime for about 1/2 hour.
Drain and season with salt and pepper.
Saute chicken in oil. Do not cook all the way. 
Remove chicken.
Saute onion, pepper, garlic, tomato, and ginger.
Add coconut milk and cayenne pepper.
Cover and let simmer about 30 minutes.

I used this in the salad. Since I make salads on Shabbat, I usually play around and make a variety of salads using flavors from that country. So I made the sakay and added it to one of the salads with oil. SPICY!!! But very good.

5 to 10 chilli peppers
4 cloves garlic
1 tbsp ginger
1 tbsp oil

Scallions, chopped

Preparation

Ingredients

6 , sliced
cabbage, shredded
1cauliflower
1 cup green beans
Vegetable oil
ginger, grated
1 tbsp satay
onion chopped
lime juice
curry powder

Preparation

Place carrots, cabbage, cauliflower, and green beans in a pan and cover with water.
Add salt.
Bring to a boil and cook a few minutes until tender.
Drain vegetables.
In a frying pan, saute ginger, satay, and onion in oil.
Add vegetables and cook 2 - 3 minutes
Add lime juice.
Let cool.

Surinamese Style Shabbat



I am not sure why I chose Suriname but I am glad I did. Suriname is located in South America and 70 percent of the country is rain forest. It is the smallest country in South America with a very diverse population.  
Suriname was a Dutch colony with a plantation-based economy. When the slaves were freed, workers were brought from the Dutch West Indies and India.
The food reflects the diverse population. The recipes I found included Indian and Indonesian foods. 
Two recipes, Pastei (chicken pie) and Pom (chicken casserole) are Surinamese Jewish dishes.

Jewish Life and History
Jews have a long history in Suriname. The first to arrive were Jews from Portugal who had fled to Holland to escape the Inquisition. To escape the new difficulties in Holland, the Jews went to Suriname. There the Jews were generally very successful. 
From what I read, the Jewish community was never very large. It seemed to stay under 1000. Today there are about 200 Jews in Suriname. 
There is a replica of Suriname's Neve Shalom Synagogue in the Israel museum. It is a beautiful synagogue and the floor is from sand.

Dahl Lentil Stew 

Although we usually have soup as a first course on Friday night, I decided to serve this stew. The mango and orange added a nice sweetness to it.

My  Dahl Lentil Stew Recipe

Ingredients


  • 2 large onions
  • 4 cloves garlic, crushed or grated small
  • margarine
  • 2 tsp cumin seed
  • 4 cups red lentils
  • 12 cups  vegetable broth
  • 2 tbsp turmeric
  • 2 tbsp curry powder
  • salt and pepper
  • juice of one orange
  • 1 mango diced

Preparation 


  1. Saute onion and garlic in margarine for about 15 minutes.
  2. Add broth, lentils, curry powder, and turmeric and salt and pepper.
  3. Cook about 25 minutes.
  4. Add mango and orange juice and cook about 15 more minutes until all the liquid is absorbed.
  5. Season with salt and pepper.

Roti Bread (Grilled Flat bread)

This bread is used to scoop the stew from the bowl. It is lightly fried in oil and fairly thin.

My  Roti Bread Recipe

Ingredients

  •  3 cups flour
  • 2 tsp baking powder
  • 1/2 cup oil
  • 1/2 cup warm water
  • pinch of salt and pepper

Preparation

  1. Mix flour, baking soda, salt, and pepper together.
  2. Slowly mix in oil and water.
  3. Knead dough, add flour if needed.
  4. Let dough reset about 5 minutes.
  5. Cut dough into egg-size balls.
  6. Heat a small amount of oil (about 1 tsp). I used a wok.
  7. Roll the dough into a large flat pancake and place in pan.
  8. When dough starts to puff, turn it over until the other side is done.
  9. To store, cover tightly with foil and leave in the refrigerator until ready to serve. Warm before serving.

Pastei  (Chicken Pie)

This was originally a Jewish recipe. It is a chicken pie recipe with a variety of ingredients. It includes dill pickles, which surprised me. This pie was very good.

My  Pastei Recipe

Ingredients

  • 6 - 8 chicken pieces (I used legs and thighs)
  • 3 dill pickles
  • 3 eggs hard boiled
  • 200 gram frozen peas, cooked
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 4 carrots
  • 2 large tomatoes
  • 2 stalks celery
  • 2 small hot peppers
  • 2 tbsp tomato paste
  • margarine
  • bay leaf
  • salt and pepper


Preparation

  1. Saute 1/2 onion in margarine.
  2. Add chicken and brown slightly.
  3. Add bay leaf, allspice, salt and pepper, and cover with water.
  4. Cook 30 minutes.
  5. When done, remove chicken, and let cool.
  6. When cool, remove chicken from bone, discarding bones.
  7. Cut chicken into small pieces.
  8. Put about 50 grams of margarine into the remaining broth.
  9. Saute remaining onion in another pan in oil.
  10. Add chicken to the onions. Then add carrot, tomato, peas, celery, hot pepper, and nutmeg. Add broth and tomato paste. Salt and pepper.
  11. Cook until the carrots are tender.
  12. Add chopped pickles.
  13. Roll pastry  thin and line the bottom of pan prepared with non-stick spray.
  14. Pour chicken mixture onto pastry.
  15. Slice eggs and layer on chicken.
  16. Cover the chicken and eggs with pasty dough.
  17. Brush top of dough with eggs white or oil.
  18. Cook in oven at 165 c for about an hour.

    Fish Marsella

    This is one of the Indian or Indonesian dishes eaten in Suriname. I am sure we had this when we ate Indonesian food.

    My  Fish Marsella Recipe

    Ingredients

    • 8 pieces sole fillet
    • Oil for frying
    • 3 cloves garlic, grated small
    • 1 onion
    • 3 tbsp curry powder
    • 3 tbsp tomato paste
    • 2 small hot peppers
    • 1/2 tsp sugar
    • 1 cup vegetable broth
    • salt

    Preparation

    1. Fry fish in oil.
    2. Remove fish and set aside.
    3. Saute oil and garlic until glazed.
    4. Add curry powder, stirring.
    5. Add fish, tomato paste,  hot peppers, water, sugar, broth,and salt.
    6. Let simmer 10 minutes.




    Peanut Sauce

    I served this warm with a variety of lightly steamed vegetables. I think the quality of the peanut butter makes a big difference in the final sauce. I made a peanut sauce when we ate Indonesian food and it was great. This time it was good but not as good.

    My  Peanut Sauce Recipe

    Ingredients

    • 2 cloves garlic, grated small
    • 1 tbsp ginger, grated small
    • 200 grams peanut butter, use a good quality peanut butter
    • t tbsp tomato paste
    • 1 tbsp soy sauce
    • 2 tbsp oil
    • 1 tbsp vinegar
    • 1 tsp chili powder
    • 2 tbsp coriander
    • coconut milk or water to taste
    • salt and pepper


    Preparation

    1. Heat oil in pan.
    2. Add garlic, chili powder, ginger. Saute.
    3. Add peanut butter.
    4. When the peanut butter is melted, add tomato paste.
    5. Mix well.
    6. Add water or coconut milk to adjust the thickness of the sauce.





    Pom Dish (Chicken Casserole)

     The recipe calls for a root cassava. Cassava is a tuber, similar to yucca. (http://www.cassavachips.com/cassava.html). I substituted sweet potato. At lunch Harry told me we grow cassava. I would have never thought to put together the ingredients in this casserole but it was very good. I may try to make it again with the cassava.

    My  Pom Dish Recipe

    Ingredients

    • 6 chicken breast, in strips
    • 4 sweet potato, grated
    • oil for frying
    • 4 stalks celery, chopped
    • 4 tbsp tomato paste
    • 2 tomato, chopped
    • 2 onion, chopped
    • 4 cloves garlic, crushed or grated small
    • juice of 1 orange
    • 1 tsp nutmeg
    • 1 cup vegetable broth
    • salt and pepper
    • 2 tsp sugar
    • 12 small dill pickles, chopped


    Preparation

    1. Fry chicken strips in oil.
    2. Add onion and garlic, and saute.
    3. Add juice, broth, nutmeg, tomato puree, celery, and tomato.
    4. Let simmer about 20 minutes.
    5. Mix together  grated sweet potato, pickles, and sugar.
    6. Spread half of the potato mixture in  baking pan. Place chicken mixture on this, then add another layer of the potato mixture.
    7. Cover with foil and bake at least one hour.
    8. Remove cover and bake another half hour until top is brown and set.

    Preparation




    1. Saute onion and garlic.
    2. Add curry and stir well.
    3. Add chicken with peppers, sugar, and salt.
    4. Stir so chicken is well coated.
    5. Add water to cover and cook until tender.



    Javanese Bami Noodles

    Ingredients


    • 500 grams spaghetti
    • 1 onion, chopped
    • 2 cloves garlic, grated small
    • 1 stalk celery, chopped
    • 2 curry leaves, chopped
    • 2 tbsp oil
    • 2 tbsp soy sauce

    Preparation





    1. Cook spaghetti in salted water.
    2. Drain and toss in oil so spaghetti does not stick.
    3. Saute onion, garlic, curry leaves, celery in oil and soy sauce.
    4. Toss over spaghetti.

    New Zealand Style Shabbat




    We've tried food from so many places. There is of course, a similarity between foods from countries with similar origins or close proximity. 
    I chose New Zealand for a change. The cuisine is inspired from European, Asian, and Polynesian influences. I tried to sample each of these in the recipes I chose.
    By the way, Leia voted New Zealand as her favorite food.
    Jewish Life and History
    Today there are about 5000 Jews in New Zealand. Jews arrived as traders in the 1840s. Although the articles I found,  did not discuss antisemitism, shechita was outlawed in 2010.
    There were also articles about the Maori  tribe and their connection to Judaism. For some reason, they have a connection to Kabbalah.

    Curried Kumara Soup (New Zealand Sweet Potato Soup)  

    Excellent soup. This sweet potato soup has interesting spices. It was perfect for the hot summer night. 



    My  Kumara  (New Zealand Sweet Potato) Soup Recipe

    Ingredients

    • 2-4 tbsp margarine
    • 4 cloves garlic, grated
    • 2 onions chopped
    • 2 tsp ginger, grated
    • 1 -1/2 tbspcurry powder
    • 6 cooked sweet potatoes
    • 5 cups vegetable broth (mine was from zucchini, carrots, leek, onion, garlic, corriander, salt and pepper
    • Salt and pepper
    • 3 cups soy milk
    • 1 cup coconut milk
    • 8 scallions chopped

    Preparation 

    1. Steam or boil sweet potatoes until soft.
    2. Saute garlic, onion, and ginger until onion is translucent.
    3. Puree sweet potatoes in blender.
    4. Add broth and sweet potatoes to , garlic, onion, and  ginger.
    5. Add curry, salt and pepper and heat. .
    6. Store.
    7. Before serving, add soy milk to soup. Mix well and heat.
    8. Add scallions before serving.


    Maori Fried Bread  

    Another delicious recipe. I thought they would dry out before I served them. I rewarmed them several times on the warmer. I stored them in a tightly covered foil pan and warmed them in the same pan. 



    My  Maori Fried Bread  Recipe

    Ingredients

    • 8-10 cups flour
    • 2 tbsp dry yeast
    • 2 tbsp sugar
    • 2 tbsp flour
    • 4 cups warm water
    • pinch salt
    • oil for frying the dough

    Preparation 

    1. In a bowl., mix 2 tbsp yeast, 2tbsp sugar, tbsp flour, 4 cups warm water. Let stand about 15 minutes until a froth forms.
    2. In a large bowl, place 9 cups flour and a pinch of salt. Mix.
    3. Make a well in the flour and pour the yeast mixture in. Gradually mix the flour into the liquid.
    4. Place dough on a floured surface, knead. Let stand 15 minutes.
    5. Prepare oil in a pot.
    6. Cut the dough into desired size and fry until brown.
    7. To store overnight, when cool cover.
    8. Heat on warmer with a little margarine or oil.

    Lemon Fish  

    This spices in this fish were very tasty!

    Ingredients

    • 5 talpia
    • Margerine
    • 2 onions
    • 1/2 tsp cinnamon
    • 1/2 tsp nutmeg
    • 2 tsp pepper
    • 1/2 tsp nutmeg
    • 1/2 tsp ginger
    • 1 cups water
    • 1/2 lemon
    • Sauce:
      • 2 eggs beaten
      • 2 tbsp flour
      • 2 tbsp corrannder

    Preparation 

    1. Sprinkle fish with salt
    2. Saute onions in margerine until translucent
    3. Add fish and cook 2 minutes
    4. Add spices  and water and cook until fish is done
    5. Remove fish and leave liquid
    6. Beat eggs, flour, and corriander together
    7. Add lemon juice
    8. Add another cup of water to remaining liquid.
    9. Add to liquid and cook until it thickens
    10. Prepare sauce, beat eggs, flour, and corrinader. Add cup of water to remaining liquid, then add egg mixture, stirring constantly. When it starts to thicken, remove from heat and pour over fish.

    White Fish Fritters

    Good, not spicy at all and went well with the spicier lemon fish.

    Ingredients

    • sole
    • 1 cup flout
    • 1/2 tsp salt
    • 1/2 tsp baking powder 
    • 1 egg 
    • 1/2 cup milk

    Preparation 

    1. Mix flour, baking powder, and salt.
    2. Add egg and milk to make a batter.
    3. Dip fish in batter and fry until brown.

    My Piripiri Chicken Recipe

    Ingredients

    • 16 thigh and legs
    • 1 bottle coca cola
    • 3 tsp paprika
    • 2 tsp dried oregano
    • 2 tsp cardemon
    • 1 tsp salt
    • 1 tsp cayene pepper
    • 4 cloves garlic, grated
    • 2 onions, chopped

    Preparation 

    1. Marinate chicken in cola for 4 hours.
    2. Place chicken in pan and sprinkle spice mixture over the chicken.
    3. Sprinkle garlic and onion on chicken.
    4. Cook
    I cooked this in 2 pans dividing the ingredients in half.

    Meat Pie 

    According to what I read, these little pies are common snacks in New Zealand (and Australia). I wanted to try to make a few types but ran out of time. This was a little dry and the crust did not cook all the way on all the pies.

    My Meat Pie Recipe


    Ingredients

    • 1 kilo ground beef
    • 1 onion, chopped
    • 1 cup vegetable broth
    • 1 tsp Worcestershire sauce
    • 1 tbsp cornflour
    • 2 tsp tomato paste
    • prepared pasty dough

    Preparation

    1. Saute meat and onion, cooking until done.
    2. Add broth, Worcestershire sauce, cornflour, and tomato paste.
    3. Bring to a boil and cook until it thickens.
    4. Grease muffin tins or use Pam. Line tins with prepared dough.
    5. Fill tins with meat and cover with another piece of dough. (I cut small circles of dough and placed it on top of the meat in each muffin tin.)
    6. Bake at 160 c for about 25 minutes.

    Ingredients

    • 12 potatoes, cut into 8 wedges
    • Vegetable oil
    • 1/2 cup bread crumbs
    • 4 tbsp fresh chives
    • 3 cloves garlic, crushed or grated
    • 2 tbsp fresh rosemary, chopped
    • salt and pepper

    Preparation

    1. In a large bowl, toss potatoes in oil.
    2. Mix together bread crumbs, chives, garlic, rosemary, and salt and pepper.
    3. Toss all together.
    4. Place potatoes on a baking sheet sprayed with non-stick spray.
    5. Bake about 40 minutes at 200 c, until done and crispy.
