By chance, for 3 weeks, we have eaten food from countries beginning with the letter M: Moldavia, Malta, and Malaysia. So continuing with that theme, this week, I chose Madagascar.
I really didn't know anything about Madagascar except that there was a movie by that name (and I have not even seen the movie). Madagascar is an island off the coast of Africa. Much of the wildlife, both plants and animals, can only be found there.

Jewish Life
As far as I could find, there are no Jews today in Madagascar. However, had the Germans (and other too) had there way, it would be the home of the Jews. Apparently when the Germans conquered Poland they needed an additional plan to get rid of the Jews. They came up with the Madagascar plan to ship all the Jews to Madagascar. (They were no the first to think of this). They were not able to do this because the British controlled the waters.Madgascar Plan

This soup is great. I could not find any veal bones so I used meat bones. I panicked, thought it would not be tastey enough, and threw in the chicken neck and bones that I had left after cutting up the chicken for other recipes.

Ingredients
Meat bones1 chicken neck with some meat (I had this left when I cut up chicken for the other recipes. I decided to add this for extra flavor.)
Water
salt
6 carrots, peeled and cut into large pieces
2 turnips, peeled and cut into large pieces
8 scallions
1 cup string beans
3 tomatoes, cut in quaters
black pepper
Preparation
Cook bones in water with salt about 1 hour.Add vegetables and cook until tender.
Remove bones.
Puree vegetables.
Add everything back into the pot and cook 5 more minutes.
Season with salt and pepper.

My Madgascar Chicken
Easy to make and very good.
Ingredients
5- 6 boneless chicken breast, cut into pieces
1 can coconut milk
2 small onion, diced
2 red pepper, diced
2 tomato, diced
2 cloves garlic
1 inch ginger
Cayenne pepper
Salt
Lemon juice
Oil
Preparation
Marinate chicken pieces in lime for about 1/2 hour.
Drain and season with salt and pepper.
Saute chicken in oil. Do not cook all the way.
Remove chicken.
Saute onion, pepper, garlic, tomato, and ginger.
Add coconut milk and cayenne pepper.
Cover and let simmer about 30 minutes.

I used this in the salad. Since I make salads on Shabbat, I usually play around and make a variety of salads using flavors from that country. So I made the sakay and added it to one of the salads with oil. SPICY!!! But very good.

5 to 10 chilli peppers
4 cloves garlic
1 tbsp ginger
1 tbsp oil
t tbsp vinegar
1 tbsp salt
Preparation
Process in food processor until it makes a paste.

Place carrots, cabbage, cauliflower, and green beans in a pan and cover with water.
Add salt.
Bring to a boil and cook a few minutes until tender.
